兴化是江苏省历史文化名城，古称昭阳、楚水，历史文化底蕴丰厚。兴化所处的地理位置，是被称为“锅底洼”的里下河地区中央**洼的地方，平均高程仅1.8米，是名副其实的“洼中之洼”。由于兴化所处的里下河平原地势低洼，历史上多有遇水先淹、无水先旱的记载。面对这样的生存困境，勤劳勇敢的兴化先民在对抗洪水的过程中，不断探索、总结，在沼泽高地之处垒土成垛，并在实践中积累了丰富的垛田生产知识和经验，逐渐形成了天人合一，与环境高度协调的垛田生产系统和生活系统。2013年5月，“江苏兴化垛田传统农业系统”作为沼泽洼地土地利用模式的典范入选农业部**批中国重要农业文化遗产，成为当时江苏唯一入选的项目。2014年4月，“江苏兴化垛田传统农业系统”又顺利入选联合国粮农组织全球重要农业文化遗产保护试点。作者李明教授曾经多次带领学生前往兴化调研，对兴化垛田形成的自然、历史原因进行考证，对垛田农耕技术进行挖掘，对兴化独特的水乡文化、饮食文化进行探讨，并将调研经过和结果著成本书。
